2014 - Capstone Project Mentoring
In late 2013, I was asked to mentor two incredibly talented young ladies for their senior Capstone Project. Nathalie and Pam, high school seniors at South San Francisco High School, both demonstrated a passion for the culinary arts as well as their respective interests in organic and Non-GMO food production. I'm honored to serve as their mentor and help them build their kitchen skills to become accomplished cooks as they move on to college.
Here are a few snapshots of our first cooking tutorial together. We made a turkey chili, which utilized all of the vegetable cuts in the knife skills lessons I gave them that afternoon. We also made some hand-made corn tortillas to enjoy with our chili afterwards!
Our second session together focused on baking skills -- we learned how to use puff pastry, made a savory turnover with a deceptively simply lattice pattern, then learned the proper way to make scones and then made some chocolate cupcakes with cream cheese frosting. We even got to pipe different patterns on the cupcakes and decorate them!
